Behind the Scenes at le Bernardin: blacklight for crabshell
Posted by Xeni Jardin, July 9, 2009 4:21 PM
From a photo-essay "narrated" by chef Eric Ripert with delicious little details about what goes on behind the scenes at the world-famous, Michelin 3-star NYC restaurant Le Bernadin:
"When serving crab, it is very important to get out each tiny piece of shell that might have been left behind and that is a difficult job. To make the task easier, we inspect the crabmeat under a black light. The shells glow under this light and they are easy to pick out."

2nd Circuit Court of Appeals Upholds NY Statute Barring Direct Sale of Wine
Continued here: http://www.law.com/jsp/article.jsp?id=1202431989579&thepage=1A challenge from out-of-state wine retailers to New York state's prohibition on direct sales and delivery of wine to New Yorkers has been rebuffed by the 2nd U.S. Circuit Court of Appeals, which upheld the constitutionality of the state's laws.
Deciding a closely watched case that drew three intervenors and a number of amici, including The Beer Institute, the federal appeals court said New York's Alcoholic Beverage Control Law does not violate the commerce clause of the U.S. Constitution because it does not favor in-state sellers at the expense of out-of-state sellers.

The Jacko Wine Pairing: Here’s How City Winery Sees It
6/26/09 at 1:07 PM
By: Daniel Maurer
Michael Dorf has e-mailed us to explain his Michael Jackson Tribute Pairing. To be fair, this isn’t the first such event City Winery has hosted — the venue’s website says a Stevie Wonder pairing is “back due to popular demand” — but yes, something about this does demand clarification. Over to Mr. Dorf.
